Originating from the Tarahumara pueblos in the highlands of Chihuahua, the Kori Sitakame is a cherished landrace pepper deeply tied to the specific high-elevation landscapes where it has been cultivated for generations. These peppers are characterized by their smooth-skinned, triangular fruit and relatively thin walls that take on a striking, almost translucent appearance when dried. With a mild-to-medium heat range of 500 to 1,500 Scoville units, the spice builds gently, peaking a few seconds after the first bite. These peppers are well adapted to the short growing seasons of regions sitting 6,000 feet above sea level.
